Spelt is easier to digest than wheat, and is a good source of manganese, dietary fiber, phosphorus, vitamin B3, magnesium, protein and copper. Sprouted unrefined whole grains can have 4x the amount of niacin, 2x the amount of B6 and folate, more protein and fewer starches than unsprouted grains. The American Heart Assn. recommends high fiber whole grains to decrease harmful cholesterol levels.
