Rye is a good source of fiber, vitamin E, calcium, iron, thiamin, phosphorus, and potassium. Rye is typically used in making breads or vegan desserts and is known for its heart-healthy nutritional benefits. Sprouted unrefined whole grains can have 4x the amount of niacin, 2x the amount of B6 and folate, more protein and fewer starches than unsprouted grains. The American Heart Assn. recommends high fiber whole grains to decrease harmful cholesterol levels.
