FUN FACT! As modern commercial wheat was altered to increase yields, it lost flavor, and whole-wheat products took on a slightly bitter taste that manufacturers had to cover up with extra sugar. Kamut, on the other hand, was discovered in an Egyptian tomb in 1949 and hasn’t been tinkered with since ancient times, so it doesn’t have that bitterness-- it’s known as the “sweet wheat.”
