To make our coconut flour, we dry and stone-grind the meat of raw, organic coconuts. Coconut meat is made up of about 14% coconut oil and 58% dietary fiber, so it’s much lower in carbohydrates than most other flours. It’s high in protein, healthy fats, and fiber and low in sugar, making it Paleo- and Keto-friendly. Coconut also contains iron and an antioxidant called lauric acid, which acts as an antiviral and antifungal and lowers cholesterol.
Coconut flour is perfect for Paleo and gluten-free baking, but you don’t have to follow a special diet to enjoy coconut flour as a nutritious addition to your favorite recipes.
