Amaranth has been used in diets around the world for thousands of years. Perhaps one of its most unique characteristics is that amaranth is one the most sustainable and easy to grow plants on earth. Amaranth seeds, like buckwheat and quinoa, contain protein that is unusually complete for a plant source, having a greater protein content than that of wheat. Unlike protein found in true grains, it is not the problematical type known as gluten.
FUN FACT! Amaranth is a nutritional power house. The name comes from the word amarantos, which in Greek means “everlasting” or “the never fading”.
Shelf life: One year if properly stored
Storage: Cool, dry, dark area. Amaranth can be refrigerated or frozen to extend freshness.
